Basque cheesecake, "2021 Flavor of the year" according to the New York Times

Internationally renowned, many people visiting San Sebastián take the chance to try it

Basque cheesecake, known in the United States as “Basque Burnt Cheesecake” and in Turkey as “San Sebastián Cheesecake,” continues its international rise. This crustless cheesecake, which started to make a name for itself in the 90s, has been acclaimed as flavour of the year by journalist Kim Severson in her article on culinary predictions for 2021 in the New York Times.

 

There are many recipes for cheesecake, as the NYT article points out. However, there is one place where its flavour includes all the nuances. This is the restaurant La Viña, in San Sebastián's old town, where on some days nearly fifty cakes are baked to cater for the people queuing at the door to enjoy what from now on will be 2021's "flavour of the year".
